
Enfrijoladas with Chipotle Peppers

There is no secret that tortillas are a key factor to all our food. With them, specially corn tortillas, we can create a hundred of different recipes. Some may seem similar to others, but the flavors are always varied and the tastiness guaranteed.
Enfrijoladas are not too different from Enchiladas. Both are made of tortillas rolled up with a filling of cheese or chicken. The difference is in the sauce. Where Enchiladas' sauce is mostly made from tomatoes and chiles; Enfrijoladas' sauce is made from beans and chiles.

Enfrijoladas with Chipotle Peppers

Ingredients

5 Chipotle Chiles
-
16 oz of pinto beans
-
2 garlic cloves
-
1/4 onion in slices
-
1/2 cup of water
-
Corn tortillas
-
Panela cheese
-
Queso fresco to serve (optional)
-
1/4 onion in slices to serve (optional)
-
Avocado to serve (optional)
Directions
Start by roasting the chipotle chiles for a couple of minutes, then add olive oil, then the garlic and onion slices.
After a couple of minutes, add some water and let it rest under a pan lid for a few minutes.
Pour everything into a blender along with the beans and blend. Put aside.
Cut your Panela Cheese in slices and then saute for a few minutes on each side.
Pour the bean sauce into a pan on low heat, add salt to taste.
Warm the tortillas first and then soak them in the bean sauce.
On a plate, serve the cheese on the soaked tortillas and fold in half.
Add more sauce on top.
Serve with Queso fresco, avocado and onion slices on top.
