Among all the things that became a big NO last year, social reunions is one of those we miss the most. Being from a latino background, it is hard not to miss your Sunday family gatherings. Thankfully, we just entered a new year, and although we're not completely out of the woods yet, we can finally start feeling hope for new beginnings. This means that, sooner rather than later, we'll be able to start getting together with our loved ones once again. And we'll be ready to host like no one else will.
For this reason, we decided to share with you this appetizer idea. It is a simple yet very tasty dip that will have all your guests asking for a chips refill. So, without further ado, our special Cheesy Chipotle Dip recipe...
Cheesy Chipotle Dip

Ingredients

Vegetable oil
-
1/4 onion
-
1 jalapeño pepper
-
7.5 oz canned tomatoes and chilis

1/4 cup tomatillo salsa

1 tbsp minced garlic
-
1 tbsp flour
-
2 tsp chipotle powder
-
1/2 tsp cumin
-
1/2 tsp oregano
-
Salt to taste
-
Black pepper to taste

1 cup whole milk
-
1 tbsp tomato paste
-
1 tsp red wine vinegar
-
1 cup cheddar cheese, grated

1 tbsp lime juice
Directions
In a large dutch oven add the vegetable oil on medium high heat along with the onion, bell pepper and jalapeños and cook for 5-6 minutes stirring occasionally until softened.
Add in the canned tomatoes and chilis, tomatillo salsa, garlic, flour, chili powder, cumin, oregano, salt and pepper and mix well.
Add the milk in, whisking well, then add in the tomato paste, vinegar and cheese and whisk until the cheese is melted.
Right before serving, whisk in the lime and lemon juice.
Serve with some chips and enjoy!
