Are you a sweet or salty type of person when it comes to breakfast? I personally prefer my first meal of the day to fall into the latter category. My mornings are not quite the same if i don't have some scrambled eggs with beans, or quesadillas with green salsa. Not having so much of a sweet tooth has literally become a part of my personality.
So, trying to be creative in the different ways I can cook my eggs (because there are just so many times that you can eat scrambled eggs and beans over and over) I came up with an easy yet non-boring way for you to cook your breakfast in the morning.
This recipe will come to replace all the ways you put eggs on a toast. And the salsa is the best part because it’s made with Pasilla chile, a mild and somehow sweet dried chile that is usually used in Mole recipes. So far so good huh?
So without further ado, let me introduce you to my Huevos Rancheros (country-style eggs) recipe...
Huevos Rancheros with Pasilla Salsa

Ingredients

2 baked corn tostadas
-
2 eggs
-
3 Pasilla Chiles
-
A small piece of onion (to taste)

1 Garlic clove
-
1 chicken bouillon cube
-
Refried black beans
-
Queso Fresco
Directions
Remove the stem and seeds from the chiles and boil them with the onion and garlic for 10 minutes
After boiling, place the chiles in the blender along with the onion, garlic, and chicken bouillon cube. Blend until desired consistency.
Cook the eggs.
Spread the beans on your tostadas and add the egg on top. Finish up with the Pasilla salsa and Queso Fresco to taste.
