
Meatless Mexican Hominy Stew

Therefore, today we wanted to share with you a recipe fit for those of you humanitarians, environmentally friendly, activists, or health conscious people who have decided to take that step that many will not dare: cutting meat out of your diet. This is something that many refuse to do, because cutting life habits is hard. This is why we salute those of you who had. Because of this, we wanted to give you something in return, a recipe that you will enjoy freely, Mexican Hominy Stew.
Hominy is a grain-like food produced from dried maize, highly nutritious and very characteristic of Mexican gastronomy. It is the main ingredient in dishes like Pozole and drinks like Atole. Here, we combined hominy with beans, cilantro and other ingredients to create a delicious stew; a great idea for lunch or dinner that will definitely satisfy you. Enjoy!
Mexican Style Hominy Stew

Ingredients

1 Poblano pepper
-
1 Tomato
-
2 garlic cloves
-
1/2 onion
-
2 tbsp Chicken soup seasoning mix

2 cups of Hominy
-
1 cup of pinto beans
-
1/2 tbsp Mexican oregano
-
water
Directions
Cut 1 Poblano Pepper, 1 Roma Tomato, 2 Garlic Cloves and half of an onion.
Finely chop cilantro. Set it aside.
Add 2 Tbs of Chicken Soup Seasoning Mix onto 1 cup of water.
Boil 1 cup of water. Once it comes to a boil, pour 2 cups of hominy (or one can).
Set aside 1 cup of pinto beans.
Place all vegetables onto the frying pan and let it simmer for 5-8 minutes.
Add Chicken broth and let it sit for 5 minutes.
Once your hominy is soft, mix it with the vegetables. Add your beans right after.
Add salt to your liking.
Add 1/2 tbs of Mexican Oregano. Let it sit for 4 minutes.
Mix well and top with chopped cilantro.
